Spicy garlic fried chicken is one of the best chicken recipes you will enjoy. It is soft, tender, and spicy with a touch of sweetness.
I have always been fond of trying cuisines from different places, be it within India or other countries. I like learning about different cultures and traditions.
when it comes to Chinese food I am always exited as its flavorful and especially the perfect balance of sweet, sour, and spiciness. That hint of sweetness when you take a bite or the kick of pepper once you have the dish it's incredible.
I remember when we were young my parents would take us to hotels once or twice a month for dinner, and being a kid I would be literally waiting for the weekends to come over as that is the only day I could feast on Chinese cuisine from the start to the end. I would first get my soup ordered and then continue with the main course and end with my favorite Ice- Cream.
So Chinese cuisine has been a part of my life. As we grew I later realized the Chinese food we had back in India was Indo- Chinese and not the authentic Chinese food. However, that didn't break my heart because I loved it no matter what, and being an Indian I think we are used to a few ingredients or spices we like in almost all our dishes. However, the only thing I have changed here is the use of ginger garlic paste instead of chopped ginner and garlic as I ran out of whole ginger.
This spicy, garlic-fried chicken is all you need, it is best served with rice. Trust me, every bite is worth having, especially if you're a spicy food lover and also one who loves garlic. It has a nice garlicky flavor and crunchiness from fried garlic flakes.
And Yeah! You can make this recipe as spicy as you want.
Ingredients for Spicy Garlic Fried Chicken: -
Boneless Chicken cut into bite-size pieces - 500 grams
Chili flakes - 2 tbsp.
Chopped Garlic - 1 whole
Chopped Green chilies - 4-5
Chopped Onion - 2
Ginger Garlic Paste - 1tsp
Black Pepper Powder- 1 tsp
Soy Sauce- 2 tbsp.
White Vinegar - 1tbsp
Corn Flour - 3 tbsp.
1 cup of water
Salt to taste (if required)
Sugar 1/4tsp
Dried red chili - 4 - 5
Ingredients for Marination -
Chicken 500 grams
Soy sauce - 2 tbsp
White Vinegar - 1tbsp
Ginger garlic paste - 1 tsp
Black pepper powder - 1 tsp
Corn Flour - 2 tsp
Garlic and chili oil
Flaked or crushed garlic - 1 whole
Chili flakes - 2 tbsp.
Sauce -
Soy Sauce - 2 tbsp.
Water - 2 tbsp.
White vinegar - 1 tbsp.
Corn flour - 1 tsp
Sugar - 1/4 tsp
Preparation:
Wash the chicken and dry out the excess water.
Take the chicken in a bowl and add all the ingredients to the marinade and set it aside for 15 minutes.
Meanwhile, let's prepare garlic chili oil. In a wok, heat some oil and add flaked garlic and let it fry on medium-low flame, keep stirring so that the garlic is not burnt and also avoid sticking to each other. Once, garlic changes color to a golden brown. It's time we remove the garlic from the oil and switch off the flame.
Now to the same oil in the wok, we need to add crushed chili flakes and set it aside to cool down, as it cools down, strain the oil and keep it aside for later use.
Next, heat the oil in a wok to shallow fry the chicken. Once the oil is medium hot, take the marinated chicken and shallow fry.
Fry the chicken for about 5-6 minutes till the chicken is golden brown, don't over fry them, we don't need it to be too dry or hard, it should be nicely soft and tender.
Once cooked, take it out and repeat the same for the next batch.
Next, prepare the sauce, in a bowl add all the ingredients needed for the sauce and set aside.
Now take the same wok in which we fried chicken add chili garlic oil and heat it on medium flame step by step, add chopped onion, chopped green chili, and stir it.
Then add dried red chilies and stir it well for 2-3 minutes. Now add the pre-prepared sauce and mix well and keep cooking.
Let it simmer for about a minute until the sauce thickens. Then add the fried chicken and provide a mix and stir fry to coat the chicken well with the sauce for about a minute or two.
Here you can check the taste of the sauce or chicken if you feel the requirement of salt, make sure you add the salt as per your taste.
Add some fried garlic flakes and toss for 30 seconds and switch off the flame.
Garnish with chopped cilantro and leftover fried garlic flakes.
Serve Hot
Note:
While frying the chicken make sure you do not overcook it as it will be hard.
The chicken here is not crispy so it tends to remain soft when chewed
while frying the garlic flakes make sure your flame either in low heat or medium-low heat, if the flame is high you will end up burning all the garlic.
if you feel you need some salt during the marination or while cooking you can surely add some, but I haven't added any salt as I have used enough amount of soy sauce while marinating the chicken and also in the sauce.
